I'd love to see that matrix. I'll email you today. We're all about keeping planning as simple as possible for trips, and getting away from precise meal planning goes a long way towards that.

Thanks!

I have developed a matrix for one pot meals that consist of taking one item from each of three columns: meat, starch and sauce. For the most part, items in each column are interchangeable, and meats are generally dried, cured or packed in foil or tins. With just a few of each food group, you get hundreds of meal possibilities. If you email me, I'll send you a copy.

Meats are easy enough to add. I often add a tin of tuna, chicken, or ham to this dish. Really, just throw whatever you have in there and it usually works out fine.

You can make this any way you want! I'll often add a packet of tuna, chicken, or ham to this, but most often just use pasta with a bunch of random veggies. Thanks for the comment.
